NIKKI'S BANANA BREAD

The recipe for my famous Banana Bread has been tweaked an improved!

It now contains protein powder and less fat than my original version. It still tastes amazing and maybe even better than it's first born sibling haha.

NIKKI'S BANANA BREAD

Makes 8 serves

Ingredients

  • 1.5 cups mashed ripe bananas
  • 150g wholemeal spelt flour
  • ½ cup Bare Whey Protein Powder (Bare Blends)
  • 150g Chobani 0.5% Plain yoghurt
  • 1 teaspoon bicarb soda
  • 1 teaspoon baking powder
  • 3 tablespoons stevia granules (Natvia)
  • ¼ cup unsweetened almond milk
  • 1 large egg
  • 2 egg whites

TOP:
Optional – ¼ cup walnuts (not included in macros)


Directions

  1. Pre-heat oven to 175 degrees Celsius
  2. Mash bananas in medium size bowl
  3. Then add egg, egg whites, yoghurt, milk, stevia, bicarb, baking powder and mix well
  4. Next add the flour and protein powder all at once and gently fold through until all the mixture is well combined, try not to over work the mixture
  5. Line a loaf pan with cooking spray and baking paper
  6. Transfer the mixture into the prepared pan and gently flatten the top
  7. Optional – add the walnuts to the top, gently pressing down into the mixture
  8. Bake in the oven for 35-40 minutes, check the centre is cooked when inserted skewer comes out clean
  9. Let stand and cool slightly before slicing
  10. Store in and airtight container in the fridge for 1 week or freeze for 8 weeks in air tight packaging
