QUICK & EASY SNACK RECIPE

You are going to love this recipe.. super fast and delish!!

This is how it came about... I got back from the gym today and found myself looking for a chocolaty snack.

I know that I need to feed my muscles protein but I didn't have any snacks in back up, ie: my protein balls in the fridge and the freezer were at a zero level.

I had a protein shake before I went to the gym and didn't really feel like having another one...

So voilà, I came up with this quick little recipe... happy face!

 

INGREDIENTS
1 1/2 Cups of raw unsalted cashew nuts
1/2 Cup of shredded coconut
3/4 Cup of pitted medjol dates (chopped)
1/2 Cup of dried blueberries or Inca berries or cranberries
3 heaped Tablespoons of Choc protein powder
3 heaped Teaspoons Raw Cacao powder
2 Tablespoons Rice malt syrup
Juice of 1/2 lime
2 teaspoons of vanilla essence
Pinch of sea salt
Splash of milk to help bind the mixture, add a little bit at a time until the mixture comes together

METHOD
It's preferable to blitz the cashews first then throw it all into a food processor or blender and blend till it all comes together and is finely chopped, you my need to blend for a little bit and then use a spatula to stir it round and then blend again.

Take the mixture out and place in a bowl (i let mine sit in the fridge for about half an hour to firm up before rolling), It might be a little bit sticky so you can add some extra coconut to the mixture if desired otherwise you can roll them into balls and then roll them in some shredded coconut.

Place in the fridge in an airtight container for up to 1 week.
