YOGHURT BLUEBERRY MUFFINS

These little babies are packed with natural protein and super delicious. They are quick and easy to make and with 19g of protein per portion you are bound to fill up with just one of these little treats. I often heat mine up and pour some Greek 0% Plain Yoghurt on top with a couple of fresh strawberries and blueberries! Otherise I put them in zip  lock bags and freeze them...that way they are always on hand if I need a quick and healthy snack.

 

INGREDIENTS

225g Wholemeal self raising flour

1/4 cup coconut sugar

2 egg whites

1 teaspoon vanilla essence

1 teaspoon vanilla powder (or use vanilla bean paste, or extra vanilla extract

1 cup Chobani Greek 0% Yoghurt

2 tablespoons coconut oil

2 tablespoons rice malt syrup

1/4 cup almond milk

1 cup frozen blueberries

 

DIRECTIONS

1. Leave blueberries to the side and mix all ingredients gently.

2. Add blueberries and gently fold through

3. Pour into a greased cupcake pan - 12 mould

4. Bake at 180 degrees Celsius for 18 minutes
