FLUFFY EGG WHITE PANCAKES

A light and fluffy pancake that tastes oh so naughty. The recipe makes 4 pancakes, which is 2 pancakes per serve!

Ingredients

  • 80 ml egg whites or any egg whites
  • 40 grams protein powder – vanilla *I used collagen protein powder. See notes if using other protein powder
  • 50 ml macadamia nut milk or milk of choice
  • 50 grams cassava flour or flour of choice
  • 1/2 tsp baking powder
  • pinch salt

Instructions

  • Add all ingredients in order into a medium size bowl
  • Using a whisk, combine all ingredients
  • Heat a non stick frypan and add cooking spray, then add 1/4 of the mixture to the pan and cook evenly on both sides until golden brown
  • Repeat with remaining mixture (recipe makes 4 pancakes, 2 per serve)

Notes

*Interchanging protein powders in this recipe
In this recipe I used Collagen protein powder – the brand was ATP Vanilla Caramel to be extact. Collagen protein is a dairy free, grain free protein powder based on collagen. It works very different to pea/rice/dairy protein.
If you are using pea / rice / hemp /dairy protein please add 90ml extra water to this recipe otherwise it will be too thick.
