GLUTEN + DAIRY FREE BROWNIE BITES

A delicious way to get your choccy fix without all the sugar, dairy and gluten often found in regular brownies. The challenge will be stop at 1!

Ingredients

For the brownie

  • 1/2 cup walnuts
  • 1/2 cup almonds
  • 1 cup medjool dates (pitted). Regular dates will also work may just need to soak in hot water for 5 mins then drain liquid.
  • 1.5 tbsp chia seeds
  • 1/4 cup desiccated coconut
  • 1/2 cup cacao powder
  • 2 tbsp coconut oil
  • 1/2 tsp himalayan sea salt
  • 1/2 tsp vanilla extract

For the icing

  • 1 tbsp rice malt syrup
  • 1 tbsp coconut oil
  • 1 tbsp water
  • 1/4 cup cacao powder
  • pinch himalayan sea salt

Instructions

  • In a food processor add the walnuts, almonds and medjool dates and process until they are well combined
  • Transfer to a mixing bowl and add the chia seeds, coconut, 1/2 cup cacao, salt and vanilla and mix well.
  • Press into a lined slice tin or container (approx. 15 x 25cm) and put into the fridge while you make the icing.
  • Mix rice malt syrup with melted coconut oil, then add water, cacao and salt.
  • Pour over the brownie slice and set in fridge for approximately 2 hours.
  • Cut into 24 pieces and store in the fridge or freezer.
