HEALTHY COOKIE DOUGH – 2 balls

A healthy and tasty twist on what is usually considered a sugar and fat bomb!

Ingredients

  • 400 gram cannellini beans can, drained
  • 30 grams almond meal
  • 60 grams protein powder – vanilla I use vegan vanilla Happy Way
  • 4 tbsp coconut flour
  • 60 grams Chobani FIT vanilla yoghurt
  • 30 grams almond butter
  • 10 grams vanilla bean paste
  • 65 grams baking stevia I use Natvia brand
  • 50 grams Noshu Milk Chocolate Chips Woolworths Supermarkets
  • pinch salt

Instructions

  • Drain and rinse the beans and add to a high speed blender
  • Keep chocolate chips aside, then add everything else to the blender
  • Blend really well, you don't want chunks of beans. Blend until it starts to come together into a doughy ball.
  • Add the chocolate chips and set to mix setting or you can hand mix these in
  • Using damp hands (water helps stopping the mixture stick) roll into 30g size balls. You'll need to weigh these out so that you get 19 balls.
  • Store in the fridge or freezer in an airtight container, put baking paper between layers to make sure they son't stick.
