VEGAN FUDGE BROWNIE

Ingredients

  • 1/2 cup cacao powder
  • 50 grams protein powder – chocolate
  • 1/2 cup Fodmapped For You Roasted Pumpkin Soup
  • 1 tbsp gold monk fruit or any natural sweetener
  • 1 tsp vanilla extract
  • 1/4 cup water

Instructions

  • Preheat oven to 175°C
  • Spay 2 small ramekins with cooking spray, and set aside
  • Add everything into a small bowl and mix well, divide mixture into the 2 ramekins
  • Cook for 25 minutes, cool slightly and then serve

Notes

NIKKI’s TIP: add 10g of dairy free chocolate chips to top of each brownie before baking. This will need to be added to your macros as an extra, but extra chocolate crunch on top is devine. PS: I use both Noshu (Supermarket) and Enjoy Life (Online) Dairy Free Chocolate in all my baking
